For the Beef:
- 3 tablespoons extra virgin olive oil
- 1 ½ lbs. sirloin tip steak cut into bite-sized chunks
- 3 tablespoons all-purpose flour for coating
Beef Seasoning:
- ½ teaspoon garlic granules
- 1 teaspoon light brown sugar
- ½ teaspoon onion granules
- ¼ teaspoon freshly ground black pepper
- ½ teaspoon smoked paprika
- ½ teaspoon kosher salt
For the Gravy:
- 2 tablespoons unsalted butter
- 1 small yellow onion finely diced
- 3 cloves garlic freshly minced
- 2 cups low-sodium beef broth
- ¼ cup dry red wine optional, for depth
- 1 ½ teaspoons Worcestershire sauce
- 1 beef bouillon cube or 1 teaspoon bouillon paste
- ½ teaspoon Dijon mustard for added tang
- ½ teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon low-sodium soy sauce for umami
- ¼ teaspoon dried rosemary crushed slightly
- ¼ teaspoon dried thyme leaves
- 3 tablespoons cornstarch + 1/4 cup cold water mixed as a slurry
Step 1: Prepare the Beef
Start by cutting the sirloin into bite-sized chunks. Pat them dry with paper towels. This helps to achieve that lovely sear when you cook them. In a bowl, combine the flour with the seasoning ingredients. Toss the beef pieces in the flour mixture until they are well coated. It’s a messy but fun task!
Step 2: Sear the Beef
Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the coated beef tips in batches. Avoid overcrowding the pan, as this can lead to steaming instead of browning. Sear them until they’re golden brown on all sides. This should take about 4-5 minutes. Once done, remove them from the skillet and set aside.
Step 3: Cook the Onions and Garlic
In the same skillet, lower the heat to medium. Toss in the butter, followed by the diced onions. Sauté for around 2-3 minutes until they’re translucent and fragrant. Then, add the minced garlic and cook for another minute. Remember, burnt garlic is a crime in the kitchen.

Next, pour in the beef broth, along with the red wine if using. Bring the mixture to a gentle simmer. Use a wooden spoon to scrape any delicious browned bits from the bottom of the skillet; this is where the flavor lies.
Step 5: Season the Gravy
Now it’s time to add the Worcestershire sauce, bouillon cube, Dijon mustard, garlic powder, onion powder, soy sauce, rosemary, and thyme. Stir well and let it simmer for a few minutes. Your kitchen should be smelling divine!
