  • In a medium saucepan, combine the sugar, light corn syrup, and water. Adjust the amount of water if it's a humid day. Place the saucepan over low heat and stir constantly until the sugar completely dissolves. This ensures a smooth syrup for the divinity.
  • Attach a candy thermometer to the side of the saucepan. Allow the mixture to cook without stirring until it reaches 260°F (or until a small amount dropped into very cold water forms a pliable ball). This step is crucial for achieving the right consistency in your divinity.
  • While the syrup is cooking, beat the egg whites in a medium bowl using an electric mixer. Beat until stiff peaks form, creating a fluffy texture that will help give the divinity its lightness.
  • Once the syrup reaches the desired temperature, slowly pour it in a thin stream into the beaten egg whites while continuing to beat on medium speed. This gradual incorporation ensures a smooth and glossy mixture.
  • After all the syrup has been added, mix in the vanilla extract and a pinch of salt. The vanilla enhances the flavor of the divinity, while the salt balances the sweetness.
  • Continue beating the mixture until it holds its shape and becomes slightly dull in appearance. This may take about 10 minutes, and the mixture should be thick and glossy.
  • Gently fold in the coarsely chopped nuts until they are evenly distributed throughout the mixture. This adds a delightful crunch and flavor to the divinity.
  • Using a buttered spoon, drop spoonfuls of the mixture onto waxed paper. Allow the candies to cool and set at room temperature for at least 12 hours, turning them over once during this time. This step ensures that the divinity firms up properly.
