Preheat your oven to 375°F (190°C) and grease a loaf pan with cooking spray or oil.
In a large mixing bowl, combine the hamburger meat, chopped onion, 15 ounces of Tomato Sauce, salt, black pepper, eggs, crumbled Regular Crackers, and chopped bell pepper. Mix well until all the ingredients are evenly incorporated.
Transfer the meatloaf mixture into the greased loaf pan, shaping it into a loaf shape. Press the mixture firmly to ensure it holds its shape during cooking.
In a small bowl, mix the remaining half-can of tomato sauce with 1 tablespoon of cooking oil. This will be used as a glaze for the meatloaf.
Pour the tomato sauce and cooking oil mixture evenly over the top of the meatloaf, using a spoon or a brush to spread it across the surface.
Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (71°C) using a meat thermometer.
Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing and serving.
