- 1 tablespoon extra virgin olive oil
- 4 boneless skinless chicken fillets
- ½ cup low-sodium chicken stock
- 1 cup heavy whipping cream
- 2 teaspoons Italian herb blend
- ½ teaspoon crushed red chili flakes
- 3 garlic cloves finely minced
- 1 cup roughly chopped fresh baby spinach
- ½ cup chopped sun-dried tomatoes
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- 1 teaspoon fresh lemon zest
- Fresh parsley finely chopped
- 1 tablespoon grated Parmesan cheese
Step 2: Sauté the Chicken
In an oven-safe skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper. Once the skillet is hot, add the chicken, searing each side for about 3 to 4 minutes, until browned. You’re creating flavor here, so don’t rush this step!
Step 3: Create the Sauce
Once the chicken is browned, remove it from the skillet and set it aside. In the same pan, add garlic and cook until fragrant, about 30 seconds. Pour in the chicken stock and scrape the bottom of the skillet to incorporate those beautiful browned bits. Then, add the heavy cream, Italian herbs, smoked paprika, and red chili flakes, stirring well.
Step 4: Add the Spinach and Sundried Tomatoes
Step 5: Return the Chicken to the Skillet
Step 6: Bake the Chicken
Once everything is nicely combined, transfer the skillet to the oven. Bake for about 25 to 30 minutes, or until the chicken is cooked through. You’ll know it’s ready when the internal temperature reads 165°F (75°C).
Step 7: Garnish and Serve
When the chicken is done, remove it from the oven and let it rest for a few minutes. Sprinkle with lemon zest, chopped parsley, and grated Parmesan cheese. This adds a pop of color and flavor.
- Use a Meat Thermometer: This is the best way to ensure your chicken is perfectly cooked without being dry.
- Experiment with Herbs: Fresh herbs can significantly enhance the dish. Consider using fresh basil or oregano for a delightful twist.
- Make it Spicy: If you're a fan of heat, add more red chili flakes or even sliced jalapeños to the sauce.
- Add More Veggies: Feel free to mix in other vegetables, such as bell peppers, zucchini, or asparagus. Everything benefits from that creamy sauce!
- Let it Rest: Always allow the chicken to rest for a few minutes before slicing to retain juices.
