Equipment

  • Tablespoon

Ingredients

  • 2 cloves garlic finely minced (adds a savory punch)
  • ½ cup uncooked long-grain rice basmati or jasmine is preferred
  • 4 cups tomato juice the sauce base
  • 8 ounces diced bacon substitute with smoked sausage or pork hock if desired
  • 2 pounds ground pork choose a blend for optimal flavor
  • 1 tablespoon sweet paprika for warmth and color
  • 1 large onion finely chopped or grated (adds depth)
  • Salt to taste
  • 2 pounds fermented cabbage leaves sour cabbage works best
  • 2 tablespoons chopped flat-leaf parsley for garnish
  • ¼ cup chopped fresh dill freshness that brightens every bite

Instructions

Step 1: Prepare the Cabbage Leaves

  • To start, carefully separate the cabbage leaves. If you're using fermented cabbage, rinse to cut down on acidity. For fresh cabbage, you may need to blanch the leaves in boiling water for a few minutes to make them pliable.

Step 2: Mix the Filling

  • In a large bowl, combine ground pork, uncooked rice, bacon, minced garlic, onion, paprika, and salt. Mix thoroughly until every ingredient is well incorporated. This part can get a bit messy. Feel free to use your hands!

Step 3: Assemble the Rolls

  • Place about 2 tablespoons of the meat mixture onto each cabbage leaf. Fold the sides in and roll tightly from the stem end to seal. Repeat this process until all your filling is used up.

Step 4: Layer the Crockpot

  • Start with a layer of tomato juice at the bottom of your crockpot. Then, add a few cabbage leaves to create a cushion for the rolls. Place the rolled cabbage on top, seam side down. Pour the remaining tomato juice over the rolls.

Step 5: Cook Low and Slow

  • Cover and cook on low for about 6 to 8 hours or until the meat is fully cooked and the cabbage is tender.

Step 6: Serve and Garnish

  • Once done, serve the cabbage rolls hot, garnished with fresh parsley and dill.

Notes

  • Use Quality Meat: Choose a blend of ground pork to make your rolls flavorful. Look for meat with a bit of fat for added juiciness.
  • Soak the Rice: Soaking your rice for about 30 minutes can help with cooking time, ensuring it’s perfectly tender.
  • Frozen Cabbage Leaves: If you're pressed for time, frozen cabbage leaves can be a lifesaver. Just thaw and use.
  • Extra Flavor: Add a splash of Worcestershire sauce or balsamic vinegar for an added layer of depth in the sauce.
  • Leftover Rolls: If you have any leftover rolls, they make a delicious lunch the next day!
