As I sat at the iconic fast-food chain In-N-Out, my eyes roamed the menu. Sure, I could order a traditional burger, but that day I was drawn to a hidden gem—the Flying Dutchman. The name itself piqued my curiosity.

Ingredients
  

For the Burger:

  • 12 oz 80/20 ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon brown sugar for a subtle caramelized flavor
  • 4 slices sharp American cheese
  • 1 large sweet yellow onion thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika new addition for a hint of smokiness

Burger Sauce:

  • 1/3 cup creamy mayonnaise
  • 3 tablespoons tomato ketchup
  • 3 tablespoons sweet pickle relish
  • 1 tablespoon classic yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon granulated white sugar
  • Salt and freshly cracked black pepper to taste
  • 1/4 teaspoon hot sauce new addition for a slight kick

Instructions
 

Step 1: Prepare the Patties

  • Start by forming the ground beef into two patties. Season them generously with garlic powder, kosher salt, freshly cracked black pepper, and brown sugar. The sugar adds a slight caramelization.

Step 2: Cook the Patties

  • Heat a skillet over medium-high heat. Once hot, add a splash of extra virgin olive oil. Next, place your patties in the skillet. Cook for about 3-4 minutes on one side. Flip them to the other side and place a slice of cheese on each patty. Let them cook for another 3-4 minutes until the cheese is melted and the patties are cooked to your liking.

Step 3: Sauté Onions

  • In a separate pan, heat some olive oil over medium heat. Add the thinly sliced onions and sprinkle with smoked paprika. Sauté them for about 10-15 minutes until they are golden and caramelized.

Step 4: Prepare the Sauce

  • In a bowl, combine mayonnaise, ketchup, pickle relish, mustard, apple cider vinegar, Worcestershire sauce, and hot sauce. Mix everything until it’s blended well. Taste and adjust seasoning as necessary.

Step 5: Assemble the Flying Dutchman

  • Once the patties are done, place them on a plate. Top one patty with the sautéed onions. If you prefer, spread some of that delicious sauce on either side. You can stack or enjoy them open-faced, depending on how messy you like your meals.

Notes

  • Choose Quality Meat: The best burgers start with quality beef. Always opt for fresh ground beef, ideally with 80/20 fat content for flavor.
  • Don’t Rush the Sear: A good sear will intensify the flavor. Ensure your skillet is hot before placing the patties.
  • Experiment with Cheese: While American cheese is classic, try pepper jack or cheddar for a different twist.
  • Stay Mindful of Salt: Since you’re adding the sauce and sautéed onions, adjust the salt in the patties accordingly to avoid overcrowding the flavors.
  • Absolutely Don’t Skimp on the Onions: They add a crucial element of sweetness and texture.
