  • ½ cup fresh raspberry puree
  • 2 cups sparkling water or club soda

Step 1: Prepare the Simple Syrup

  • In a small saucepan, combine the sugar and filtered water. Bring this mixture to a gentle boil over medium heat, stirring until the sugar fully dissolves. Once done, remove it from heat and add in the lemon zest. Allow it to steep for about 30 minutes. This step infuses the syrup with a refreshing lemon flavor.

Step 2: Prepare the Berry Purees

  • While the syrup is cooling, it’s time to prepare the berry purees. Rinse your strawberries and raspberries thoroughly. In a blender, add the strawberries and raspberries. Blend until smooth. If you prefer a smoother texture, you may strain the puree to remove any seeds.

Step 3: Combine Ingredients
