  • 1 pack of ramen noodles with included seasoning
  • 1 large egg lightly beaten
  • ½ cup of water
  • 2 cloves of black garlic minced
  • 2 sprigs of green onion finely sliced
  • 1 tbsp. fiery sesame oil
  • 1 ½ tsp. tamari soy sauce
  • 1 ½ tsp. rice wine vinegar
  • ½ tsp. sea salt
  • ½ tsp. freshly cracked black pepper
  • ½ tsp. sambal oelek
  • ¼ tsp. red chili flakes
  • 150 g of soft tofu diced
  • 1 tbsp. toasted sesame seeds for garnish
  • Optional: 1 tsp. grated ginger
  • Optional: 1 tsp. miso paste

Instructions
 

Step 1: Prepare the Noodles

  • Start by boiling the ramen noodles according to the package instructions. Usually, this takes about 3-4 minutes. Don’t overcook them. You want them slightly firm.

Step 2: Sauté Garlic and Green Onion

  • In a medium saucepan, heat the sesame oil over medium heat. Add the minced black garlic and sliced green onion. Sauté for about 2 minutes until fragrant.

Step 3: Add the Liquid and Seasonings

  • Pour in the ½ cup of water, tamari soy sauce, rice wine vinegar, sea salt, black pepper, sambal oelek, and red chili flakes. Bring the mixture to a gentle simmer.

Step 4: Integrate the Egg

  • Slowly pour in the lightly beaten egg while stirring continuously to create ribbons. This thickens the broth and adds richness.

Step 5: Add the Noodles and Tofu

  • Gently fold in the cooked ramen noodles and diced tofu. Let them soak in the flavorful broth for 2-3 minutes.

Step 6: Finishing Touches

  • Off the heat, sprinkle toasted sesame seeds on top for that final touch of nuttiness. If you’ve opted for the grated ginger and miso paste, now’s the time to mix those in.

  • Don’t Overcook the Noodles: Aim for al dente to retain a pleasant chewiness.
  • Adjust Spice Levels: Feel free to tweak the amount of chili flakes and sambal oelek based on your spice preference.
  • Tofu Preparation: Press the tofu for about 15 minutes if you want it firmer.
