For the Butter Spread:

  • 6 tablespoons of unsalted butter softened
  • 2 tablespoons of mayonnaise
  • 1/4 cup of crumbled Cotija cheese
  • 3 tablespoons of shredded cheddar cheese
  • 2 tablespoons of fresh cilantro chopped
  • Pinch of red chili flakes
  • 1 tablespoon of sour cream for extra creaminess

For the Sauce:

  • 1/2 cup of mayonnaise
  • 1/2 teaspoon of garlic powder
  • 1/4 teaspoon of onion powder
  • 1 roasted jalapeño finely minced
  • 1 tablespoon of finely chopped red bell pepper
  • 1 tablespoon of lime juice for a fresh zing

For the Sandwich:

  • 4 slices of sourdough bread
  • 4 slices of Oaxaca cheese
  • 4 slices of sharp cheddar cheese
  • 1/2 cup of shredded Mexican cheese blend
  • 2 tablespoons of crumbled Cotija cheese

Instructions
 

Step 1: Prepare the Butter Spread

  • Mix softened butter, mayonnaise, Cotija cheese, cheddar cheese, cilantro, red chili flakes, and sour cream in a bowl. You want everything well combined to create a creamy spread.

Step 2: Make the Sauce

  • In another bowl, whisk together the mayonnaise, garlic powder, onion powder, roasted jalapeño, red bell pepper, and lime juice. This zesty mixture will complement the sandwich.

Step 3: Assemble the Sandwich

  • Spread the cheese mixture on one side of both slices of bread. On the unspread side, layer Oaxaca cheese, sharp cheddar cheese, and Mexican cheese blend. Then, sprinkle Cotija cheese on top. Close the sandwich with the other slice of bread.

Step 4: Grill It

  • Heat a skillet over medium heat. Lightly grease it. Place the sandwich in the skillet and grill for about 3–4 minutes on one side; you want it golden brown. Flip and repeat on the other side.

Step 5: Serve

  • Once both sides are beautifully crisped and the cheese is melted, take it off the heat. Cut it in half, serve with sauce on the side, and dive in!
