  • 2 ½ cups hot water
  • 4 ounces shredded cheddar cheese
  • ½ cup packed brown sugar
  • ¼ cup butter
  • 2 packages active dry yeast
  • 2 ¾ to 3 3/4 cups all-purpose flour
  • ¼ cup warm water
  • 3 teaspoons salt

Instructions
 

  • Begin by activating the yeast. In a small bowl, combine the dry yeast with warm water, ensuring that the water temperature is between 105°F to 115°F. Allow the mixture to sit for a few minutes until the yeast becomes frothy, indicating that it's activated and ready to use.
  • In a large mixing bowl, combine the brown sugar (or honey), melted butter or margarine, salt, and hot water. Stir the mixture well until the sugar is dissolved and the ingredients are thoroughly combined. Let the mixture cool for about 5 minutes to a lukewarm temperature.
  • Once the mixture has cooled slightly, add in 3 cups of whole wheat flour. Use an electric mixer set on low speed to mix the ingredients together until they are moistened. Scrape down the sides of the bowl as needed. Gradually add the remaining whole wheat flour, continuing to mix until the dough begins to come together.
  • Pour in the dissolved yeast mixture into the bowl with the dough mixture. Blend everything together until well combined, ensuring that the yeast is evenly distributed throughout the dough.
  • Transfer the dough onto a floured work surface. Begin kneading the dough, incorporating the remaining all-purpose flour gradually. Knead the dough for about 10 to 15 minutes until it becomes smooth and elastic. The dough should spring back when lightly pressed with your finger.
  • Grease a large bowl with shortening or cooking spray, then place the kneaded dough into the bowl. Cover the bowl loosely with plastic wrap or a clean kitchen towel. Allow the dough to rise in a warm, draft-free place until it doubles in size, typically for about 30 to 45 minutes.
  • Once the dough has risen, gently punch it down to release any air bubbles. Divide the dough in half and shape each portion into a loaf. Place the shaped loaves into greased loaf pans, ensuring they fit snugly.
  • Cover the loaf pans with a clean kitchen towel and let the dough rise again for another 30 to 45 minutes, or until doubled in size.
  • Preheat the oven to 375°F. Once the loaves have risen, bake them in the preheated oven for about 30 minutes. After 30 minutes, reduce the oven temperature to 350°F and continue baking for an additional 10 to 15 minutes, or until the loaves are golden brown and sound hollow when tapped on the bottom. Top with some shredded cheddar cheese to add some extra flavor.
  • Remove the baked loaves from the oven and immediately transfer them onto wire racks to cool completely. Once cooled, slice the bread and serve it with your favorite spreads or enjoy it as is.
