  • 4 tablespoons chopped fresh basil leaves

  • 9 oz instant ramen noodles

Step 1: Cook the Bacon

  • Start by heating a large skillet over medium heat. Add in your diced bacon and allow it to crisp up about 8-10 minutes.
  • The goal here is for the bacon to render its fat and become golden brown. Don't rush this; it makes all the difference in flavor.

Step 2: Sauté the Garlic

  • Once the bacon looks perfect, toss in the minced garlic. Sauté for just about a minute. Keep an eye on it, as you don't want burnt garlic ruining your dish!

Step 3: Prepare the Noodles

  • While the bacon and garlic are working their magic, boil water in a separate pot. Add in the instant ramen noodles and cook according to package instructions.
  • Aim for a touch less time than directed, as we want them slightly firm. Drain and set aside once done.

Step 4: Whisk Together the Sauce

  • In a bowl, whisk together the eggs, Parmesan cheese, soy sauce, black pepper, and salt. Make sure it’s a smooth mixture; the cheese should break down nicely with the eggs.

Step 5: Combine Everything

  • Now, it’s time to marry all the flavors! Add the warm noodles to the skillet with bacon and garlic. Remove it from the heat (important! You don't want scrambled eggs).
  • Slowly pour in the egg and cheese mixture while stirring quickly. This way, the heat of the noodles cooks the eggs gently, resulting in a creamy sauce.

Step 6: Add Fresh Herbs and Serve

  • Once you have that glorious, creamy coating, mix in the chopped basil. It adds color and freshness that brightens up the dish. Serve it immediately, as this dish is best enjoyed fresh!

Notes

  • Use room temperature eggs: This helps avoid scrambles in the final dish.
  • Reserve some pasta water: It can help thin out the sauce if needed.
  • Don’t skip on the bacon: It provides that key flavor element.
  • Experiment with cheese: Pecorino Romano can be a nice twist instead of Parmesan.
