Ingredients
  

Sweet Yeast Dough:

  • 1 ¾ cups all-purpose flour
  • 1 ½ teaspoons active dry yeast
  • ¾ cup warm milk
  • stick unsalted butter softened
  • 2 tablespoons granulated cane sugar
  • 1 egg yolk
  • 1 egg white
  • teaspoon fine salt

Poppy Seed Filling:

  • 1 ½ cups finely ground poppy seeds
  • ¾ cup milk
  • ½ cup white granulated sugar
  • 1 teaspoon spiced rum such as Kirkland or Stroh 40
  • 2 teaspoons freshly grated lemon zest
  • 1 teaspoon vanilla bean paste or vanilla extract
  • ¼ teaspoon ground cinnamon
  • cup golden raisins
  • 1 tablespoon honey
  • ¼ teaspoon cardamom

Miscellaneous:

  • 1 tablespoon powdered sugar for dusting (optional)

Instructions
 

Step 1: Preparing the Dough

  • In a large mixing bowl, combine the warm milk with 1½ teaspoons of active dry yeast. Let this mixture sit for about 5 minutes until bubbly.

Step 2: Mixing the Dough

  • Add softened butter, cane sugar, egg yolk, egg white, and fine salt into the yeast mixture. Gradually stir in the all-purpose flour until a dough forms.

Step 3: Kneading the Dough

  • Turn the dough out onto a lightly floured surface. Knead for about 10 minutes until it becomes smooth and elastic.

Step 4: Letting the Dough Rise

  • Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours until it doubles in size.

Step 5: Preparing the Poppy Seed Filling

  • In a medium saucepan, combine the ground poppy seeds, milk, and white granulated sugar. Stir continuously over medium heat until the mixture thickens, approximately 10 minutes.

Step 6: Adding Flavors to the Filling

  • Remove from heat and stir in spiced rum, lemon zest, vanilla bean paste, ground cinnamon, raisins, honey, and cardamom. Let it cool.

Step 7: Rolling Out the Dough

  • Once the dough has risen, turn it out onto a floured surface. Roll it into a rectangular shape about ¼-inch thick.

Step 8: Adding the Filling

  • Spread the cooled poppy seed filling evenly over the rolled dough.

Step 9: Rolling and Shaping

  • Carefully roll the dough into a log, starting at one of the long edges. Pinch the seams and ends together to seal.

Step 10: Baking the Roll

  • Preheat your oven to 350°F (175°C). Place the roll on a baking sheet lined with parchment paper. Let it rise for another 30 minutes, then bake for 35-40 minutes or until golden brown.

Step 11: Cooling and Serving

  • Let the roll cool before dusting it with powdered sugar. Slice and serve with your favorite beverage.

Notes

  • Store the roll in an airtight container to keep it moist.
  • Use freshly ground poppy seeds for the best flavor.
  • Make sure your milk is warm, not hot, to activate the yeast properly.
  • Let the filling cool completely before spreading it on the dough.
  • Use a serrated knife to slice the roll cleanly without squishing it.
