Ingredients
  

  • ¼ cup All-purpose Flour 30 g
  • 3 tablespoons Bread Crumbs
  • 3 tablespoons Cornstarch
  • 3 Russet Potatoes peeled and cooked
  • 1 Egg
  • Peanut or Vegetable Oil for frying
  • Salt and Pepper to taste

Instructions
 

  • Start by peeling the russet potatoes and slicing them into uniform ¼-inch thick rounds. This will ensure even cooking and consistent smiley faces. Pat the potato slices dry using a paper towel to remove any excess moisture.
  • In a shallow bowl, combine the cornstarch, all-purpose flour, and bread crumbs. Mix well to create a dredging mixture. In another bowl, beat the egg and season it with salt and pepper. Dip each potato slice into the beaten egg, ensuring it's fully coated, then transfer it to the dredging mixture. Coat both sides of the potato slice with the mixture, pressing gently to adhere.
  • Now, let the creativity flow! With a sharp knife, gently carve smiley faces onto one side of each coated potato slice. Be imaginative and create a variety of expressions. Once you've crafted the smileys, set them aside on a baking sheet.
  • In a deep frying pan or Dutch oven, heat enough peanut or vegetable oil for frying. Once the oil is hot (around 350°F/175°C), carefully place the smiley face fries into the oil, face side down. Fry them for approximately 2-3 minutes per side, or until they turn golden brown and crispy. Ensure not to overcrowd the pan; fry in batches if necessary.
  • Using a slotted spoon or tongs, transfer the fried smiley face fries to a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle them with a pinch of salt and pepper, to taste.
